
We have piles of leftover ham from Easter. While Easter dinner was quite good, there is only so much plain ham I can eat! So yesterday, I pulled out my
Desperate Dinners cookbook and found a whole section of ideas. This one called for Ham salad, Asparagus, French bread and Swiss cheese. I didn't have the french bread or Swiss cheese, so we modified it - Ham, mixed in with mayo & Dijon mustard (just like a good chicken salad), then i put it on top of my leftover Cheddar Biscuits (I had cut the tops off so the ham could balance well). I then put 1 piece of cooked asparagus on top of each and added some Italian shredded cheese - and baked a few minutes until the bread was toasted and the cheese was melted. The whole thing took about 10 minutes, looked fancy, and was uber yummy!!
